Maple Old Fashioned
Ingredients
: 12 tsp St Lawrence Gold Dark Maple Syrup, 2 dashes of Angostura bitters, large ice cubes, 60ml of bourbon whisky, soda water, 1 slice clementine, 1 Maraschino cherry
Place the maple syrup and bitters in a short tumbler and add a couple of large ice cubes.
Pour over the whisky and a splash of soda water if desired. Stir, garnish with the clementine slice and Maraschino cherry to serve.

Halloumi and Peaches with St Lawrence Gold Maple Syrup, Mint and Chilli
Ingredients:
4 ripe peaches, 1 pack halloumi, 4 tablespoons St Lawrence Gold maple syrup,
1 chilli and a small bunch of mint.
Cut peaches into quarters and brush with St Lawrence Gold Maple Syrup and bake in the oven for 15-20 minutes until golden brown.
Fry the sliced halloumi in a preheated pan. Once it's golden, take the peaches and halloumi, place them in a bowl with chopped up mint and a thinly sliced chilli.
Then drizzle the juices that have come from the peaches over the dish with an extra bit of St Lawrence Gold Maple Syrup for a delicious and healthy salad.

Apple and Walnut Cake
Ingredients for the cake:
250g self-raising flour, 250g butter, 125g caster sugar, 125g soft brown sugar, 4 eggs, 2 1/2 eating apples, 50g walnuts, 1 lemon, zested. Ingredients for decoration: 2 1/2 eating apples, 40g walnuts, juice of 1/2 lemon, 250g icing sugar, 3 tablespoons St Lawrence Gold maple syrup
for icing, 3 tablespoons St Lawrence Gold maple syrup
for glazing.
Line a bundt cake tin well with butter and caster sugar. Mix together butter, caster sugar, brown sugar and eggs until pale and fluffy. Slowly fold in the flour and lemon zest, be careful not to overmix.
Pour into a lined bundt tin, add chopped apples and walnuts to the top and bake for 35-45 minutes.
To decorate, mix icing sugar, lemon juice and St Lawrence Gold Maple Syrup to form a thick icing. Pour the icing over the cake and let it drip down the sides of the sponge. Add chopped apples and walnuts then sprinkle over wine-soaked raisins for a delicious finish.

Asian Belly Pork Glazed in Miso and St Lawrence Gold Maple Syrup
Ingredients:
1.5kg belly pork, 1 teaspoon of salt, 1 tablespoon of oil, 1 pint of water, 2 tablespoons of miso paste, 2 tablespoons of soy sauce, 1 tablespoon of rice wine vinegar, 2 tablespoons of St Lawrence Gold maple syrup,
1 thumb of ginger, 1 clove of garlic, 1 bunch of spring onions sliced, 1 handful of coriander chopped, 75g peanuts salted.
Roast seasoned belly pork for 30 minutes. Leave in the fridge overnight and then remove the skins and divide into portions ready to fry.
Mix together the St Lawrence Gold Maple Syrup, miso, soy, rice wine vinegar, ginger and garlic. Once ready, fry the pork until golden and crisp, pour over the delectable syrup mixture with 100ml of water. Turn up the heat to allow the sauce to boil and reduce.
Once cooked, serve the pork with spring onions, coriander and roasted peanuts for the perfect sweet and tangy meal.
