Firstly, it uses a combination of baking and processing to bring out the best flavor profile possible. The pi\xf1a plants are harvested and carefully chopped by hand. The pi\xf1as are then slowly baked in traditional brick ovens and then the pi\xf1as are crushed by a two-ton volcanic stone Tahona wheel and a roller mill. Next, they are fermented in small, traditional pine wood tanks. It is then distilled in custom-made copper pot stills designed by our Master Distiller, giving it a smooth taste and aroma.
